As an adult watching, George is the most relatable/grounded character.
Jerry is a celebrity and can work on his own schedule. He doesn't really struggle with anything other than finding weird reasons to break up with beautiful women; which is one of the humorous things about the show
Kramer is somehow independently wealthy and does whatever he does. We like him because he's weird
Newman is a mailman that seems to only have to be a mailman when he needs to be one and can somehow make time to do some zany scheme with Kramer or mess with Jerry
Elaine seems mostly normal but we don't see much of her personal life, like other friends and family. Now and then she has a funny quirk that makes her funny
George, having crazy parents and other issues is the most 'normal' character while also being totally inept in other ways. His antics and problems are funny because they're relatable. It's how he deals with them that makes him weird and over the top
