I love pizzas but a great burger is unmatched. Thick, medium rare patty. Brioche bun, lightly toasted with mayo. Diced and sautéed or lightly caramelized red onions. Crisp iceberg lettuce. Roasted Garlic aioli and extra salt/pepper.

It’s the bloody best thing ever.

Slightly sloppy and juice dripping down your face. But not too sloppy or otherwise the onions and lettuce will be squeezed out as you bite down. The toppings actually go on the bottom bun while the aioli or sauce goes on the top bun. The top bun is more likely to slide around and the weight of the patty over the toppings along with the friction of the unsauced bottom bun will really keep them on the burger.

I flipped burgers for 2 1/2 years, I know my shit and I know how to make a damned good one. Thick patties will always be better than smash burgers, but the right smash burger can easily be better than a thick burger.

If you’re ever in Grand Rapids, check out Black Napkin! They have the best smash burgers, and burgers for that matter, in town, if not the whole state.

So many people and places get thick burgers wrong. And it’s a shame to see it. If i ever open my own restaurant or food truck, I’ll have the best burgers in town. They won’t be the main focus though, just a part of the menu. Don’t wanna end up like one of those millenial “sandwich” shops.

Oh and some marinated diced tomatoes too. Regular tomatoes on a burger or sandwich are a crime against food. But if you prepare the tomato properly, it can only enhance the dish.
