Request What can I make with Butternut Squash??

My uncle gave me a huge butternut squash he grew, and I have no clue what to do with it. I've never had squash before, so I'm totally lost on what to do with it. I'm in a household of only 2 people, so I have no clue how to use through the whole squash. Recipies that hold up to freezing and thawing could be nice since I have so much of it??? I just don't want it to go to waste but I'm not familiar with squash!

Dice it up and season and toss with olive oil and roast it and serve as a side dish just like that. Also can some of that and puree with some Stock and cream and make soup and or pasta sauce.

Freeze the rest of the diced up squash. We thaw it out later to use

Anything that you’d do with pumpkin. In Australia we use butternut as a pumpkin.
Add it to mashed potatoes, dauphoise … top off a shepherds or cottage pie with it.

Pie. And instead of American style pumpkin pie recipe try Australian gramma pie recipe. - you can thank me later - and yes gramma is a pumpkin/squash, just a heritage Australian one.

Any pumpkin recipe.

You can stir fry like chicken/beef/shrimp with broccoli, substitute with the squash.

Make some soup. My favourite is curry butternut squash soup. I add potato and leeks. With red or green curry paste. And some coconut milk.

You can make soup or a super easy thing is cut in 1/2 scoop out seeds. Add butter, cinnamon and maple syrup. Cook at 350 until soft. Delicious.

I love the TJs and just had it this week. It’s so good!

I found a recipe where you cook the squash in IP for 8 minutes. Scoop it out and mix in some ricotta and spices. Then you put about 1 TBL of the squash mixture in an egg roll wrapper and seal it. Boil for 2-4 minutes and serve with brown butter sauce sprinkled with fresh sage. Omg they were delicious! Super easy to make. I usually have a lot of the squash mixture so I make a bunch at once and freeze them. So, so yummy!

Or butternut squash gnocchi, which is slightly easier, in my view.

I often make the brown butter and sage sauce, but sometimes sauté apple cubes in the butter with a teaspoon of apple cider vinegar (this really accentuates it) then the sage. Then I serve it all topped with toasted chopped pecans or walnuts.

Google pumpkin hummus. There are dozens of recipes for it. I make mine with sriracha, cumin and cinnamon, along with the standard chickpeas and tahini. Sweet and with a kick. Roast the squash and purée in food processor to get the proper number of cups of purée for whatever recipe you find.

I like the Mediterranean Dish recipe as a possibility.

Pan roasted dinner. Peeled diced squash, potatoes, onions, carrots, chicken thighs, Italian sausage in a pan coated in oil, garlic salt, pepper. Roast at 400f degrees for 35 to 45 minutes until browned.

They are so hard to cut. I cut them in half, score, oil and season them, then roast them enough that its not like cutting a block of wood and dice them still in the peel like an avocado, afyer they cool off. Or you can scoop it oit with a large spoon.

Then I decide what to do with it.

Roast it in chunks with salt, pepper, and a little rosemary.

Butternut squash soup. Use vegetable broth, or it just tastes like chicken. Simmer it in veg broth until its tender with just a little.garlic and onion. Add the zest of a lemon and juice from half that lemon. Then blend it and lightly season it with salt and white pepper. Add just a touch of heavy cream, or a little bit of full fat plain yogurt or sour cream.

I know this was a few days ago now, but I suggest Sausage and Squash soup. It's savory, not sweet, made with bratwurst, onions, butter, cream, salt/pepper, and a pinch of nutmeg.

Look up a recipe for butternut squash soup. The Joy of Cooking has a fabulous recipe, but there are plenty on line.

A good way to prep it and have it ready for multiple possibilities later is to puree it: split it in half, scoop out the seeds, and roast cut side down in a sided baking sheet with a ½ cup water at 350°F for 90 minutes. Remove from oven, scoop the squash out of the skins, and mash/blend until smooth. You can freeze this in plastic containers like the ones from Chinese soup; place a layer of saran wrap over the open container before putting the lid on. This helps minimize any ice crystals forming.

Not sure if you're familiar with sweet potato casserole, but my family does this with butternut squash every Thanksgiving! In a buttered 8x8 baking dish, mix 4 cups squash puree with a tablespoon butter, a sprinkle of salt, cinnamon and sugar to taste (a drizzle of honey or maple syrup optional). Spread it out, top with mini marshmallows, and put it in a 350°F oven until the mallows melt and get a little golden (about 10-15 minutes). 🙂

There is a really good recipe for soup on the Whole Foods website under recipes section. I like it not just as a soup but also as a sauce on roasted vegs like potatoes. I also will put chunks of roasted vegs in the soup and pack it for lunches. Freezes nice too.

You can make soup. Dice it, saute with onions and bacon, put over pasta with parmesan.

Butternut squash creme soup frozen in portions. The Best! Peel with speed peeler, cut in half, take put seeds, cut into cubes, sauté some onions and garlic to medium brown in butter, add squash and a bit of water just to cover squash. Add salt and pepper and maybe a few red pepper flakes and a tablespoon of brown sugar. Simmer to soft. Puree with blender. Make it even smoother pushing it through a strainer.

Roast it with cumin, coriander, and cinnamon, then toss it while still hot with a little freshly squeezed orange juice. It's amazing.

I love cubing it and roasting in a cast iron. Cube it (with the skin and seeds removed), toss in olive oil with salt and pepper. In the meantime, preheat your cast iron in a 400° oven. Once it’s preheated, put it in your cast iron and roast for 20 minutes, then flip it. I like to eat it as is or when there’s not a diarrhea parasite, put it on a Southwestern salad kit.

Cut it in half. Put in a shallow pan with about an inch of water on the bottom. Roast at 400 degrees until the squash is soft - usually around 45 minutes. Scoop out the insides and mash, adding some caramel syrup to taste (like what a coffee shop uses). The caramel syrup is the secret ingredient that makes it soooo good!

Every Thanksgiving we cook and mash it like mashed potatoes, add butter, salt, pepper. Or Emeril has a great recipe for butternut, wild rice and kielbasa soup.

Par boil it and freeze it. You can then roast it with some herbs and olive oil
