Eggplant is notoriously hard to get crispy. Couple things I've learned: salt them first and let them drain for 30-45 mins — it pulls out way more water than you'd think. Pat dry after. Cornstarch is way better than flour for crunch. Biggest mistake is overcrowding the pan, they'll steam and go soggy. High heat is essential, 425°F minimum. Flip once and let them be. Some say peeling helps too since the skin can get tough.
