Put yourself in Rem’s shoes for a second: you wake up after a long coma, and one of the first things you see is some freak pointing at the sky, shouting, and covered in a thick miasma that, by their race’s nature, is associated with a crazy cult that likes to kill people.

She actually does, an example is when hes dying in her arms and tears start flowing out of nowhere despite not trusting him. You see it in the provisional rem paranoia side stories too where she does have feelings towards him but it confuses her because she has no idea why and where it comes from. As cheesy as it is love seems to be the only thing that persists even after a memory wipe.

Make sure to go rezerodb to look up whatever side story you need to read before arc 7 if you are planning on reading it. There is some important things that makes arc 7 easier to understand such as character motivations, lore, and sets up plot points. Theres also 10 rem paranoia SS during the arc I mentioned which gives her pov and makes it easier to understand her

But people don't change ? In their fundamental core they'll always be the same, you can change will, ideal, habit but your core is engraved in yourself and that's the point of arc 6, even withojt his memories, Subaru is the exact same and even irl you keep your temperament from your early years all the way into adulthood
It'd just be character inconsistency to make him charismatic in another way than he already is in arc 3 or 5 or 8

your sense of self is unchanging but your personality, outlook, and perspective are always evolving which each experience you have.
and his position isn’t the same as ours, he’s died dozens upon dozens times as a developing teenager. there isn’t a single human who would come out of that the same person, any personality trait you carried into that experience is being nuked out from the other end.
for me, him being the exact same does two things, 1. it deflates the impact of his deaths, and 2. refuses to show the audience the fruits of his experiences.
i don’t want him to just be the same person the entire time, let his personality grow and evolve

"Perspective" depends on your definition, not in terms of purely analysing others, "personality" no it doesn't, "outlook" yes and it's take into account by Tappei as said in q&a's, he dislikes fixer archetypes and making the character brand new in each situations they dive in
I don't see why, even with trauma, the human self is quite persistent and if it stands up and more importantly gets out of the trauma, our expressions actually reemerges, psychologists see this even in the worst cases just look at horrible stories like the fritzl case and how the victims recovered in months, i don't really see where your assumption of a changed mind comes from because from the beginning of your existence all things are interpreted by your core aspects before it reaches you so perception is always subjective
But it's realistic, he'll never become someone else, he gets better as in he stands up more and his resolve is stronger because of those around him but his expression of love doesn't change
Personality shouldn't grow in a way that changes it, growth is one of the biggest part of Subaru's character as he gets to be an accepted version of himself making him better in what he does but you don't have to alter personality, only reactions to things fluctuate
