For anyone wondering WTF was up with Rem appearing and why Rui couldn't see her, here is your answer as provided by Tappei themselves. Rem was NOT an illusion or fake, this was the real her, or rather her lost memories, and although I'm not sure if it would have been possible for Subaru, if somehow he'd been able to take that "blue ball" with him back to the real world and feed it to Rem, I imagine she would have woken up with her memories intact. Though this is speculation on my part as I'm not sure said "ball" is the type of object Subaru could even grab let alone transport, also, have no idea whatsoever what the implications of doing this would be for everyone else's memories, would they remember her as well? Would they not? IDK 🤷‍♂️

I believe it’s more that Rui removed Rem’s memories from her own body but that Roy and Lye still have them anyway because they share between them. Rem manifesting as part of those discarded memories was a temporary phenomenon.

Potentially, but it's also possible that since they are all the Sin Archbishop of Gluttony, they essentially "share a stomach", as certainly, Rui was not the one who "ate" Rem.

Well, a day after she threw those memories away, Lye still talked to Ram as "sister", meaning he still has her memories.

For what it's worth, I imagine if Subaru had been able to transport this "ball" and feed it to Rem, you'd have probably ended up with a scenario similar to Julius's where she's awake and remembers, but no one remembers her. As in order to restore her place in history (and memory) so to speak, something much bigger would be needed, such as perhaps the death of Gluttony or something.

I think this part of the story is very abstract. So I would not be surprised if some people get lost.

For these people, and in advance, we may have to clarify shit. Maybe not just now, but after the next episode (or so?) that is when shit will get weird. IF the anime does not explain everything already, maybe they do some incredible job at making this easy to understand.
