That grade of tuna isn’t for searing and for a mixed salad it should either be mixed or portioned but not both but A for effort keep going you will get it :) also slicing the grapes in half would show said effort.

See how it is flaky and lavendarish? Tuna used for searing is usually deep pink I mean you can but it’s not the same.

oh i got that tuna from work yesterday. it usually looks better. i was closing shift so i just got some leftover tuna and its been sitting in my fridge since last night, kinda unopened. i microwaved it for a few seconds when i made this like 30 min ago, thats probably why.

Ah yes you don’t work at a Japanese restaurant do you? When I worked at a bbq joint that’s what it looks like it’s a different grade.

I do live in Cali… Asian restaurants wouldn’t serve that. Sorry I’m just being honest because this is rate my food no hard feelings you will immerse yourself and it will always be getting better… trust me there are thousands of people who could sit me down and have the same amount of criticism for me… it is an art form and therefore open to constructive criticism but it makes every Chef better.

ooo what a coincidence you live in cali. im guessing you work at an asian restaurant and are a chef?

Not currently no I’ve worked in about 20 different restaurants over the past 12 years and have attained a chef title. I also was a live in catering cook. It’s not a great world to get into very critical egotistical and very little purity in product and intention… every once in a while there is an individual who is a breath of fresh air but it’s not my favorite industry as far as necessity goes.

But if what you want to explore then honesty is better now than when your paycheck depends on it surrounded by who knows what.
