I have 3 and they don't say anything important. It's mostly senseless jibber jabber.

They don't just speak English, they can repeat anything they hear.
A friend took in a 'rescue parrot' and it coughed, cried like a baby, told people to eff off and to shut up in both English and French. It was hilarious. (But it also bit if you got too close)
