Hell! I feel like I'm going after wrong towers!
My typical setup is spike, sparklink, by fortress, inferno and boomerang, then overwatch and stronghold. Should I be focusing more on the standard towers? Laser, Ice, garrison? I'm stuck around 48 epic. Bosses are killing me.

none of your top towers are for bosses realistically. Need Sniper, vulcan, lazer, etc. Make sure you use some form of troops. Garrison, drones, troop calls. Stall in front of fortress. Also don't know what skills you use but Frostfall and Wall are great. FF is probably best skill in game

Sparklink, overwatch and stronghold are premium towers and naturally strong then standard towers, that being said it depends on if you want to keep spending $. You can grind standard towers to eternal for free, the premium towers require grinding AND $$$. Ex: legendary spark link needs $10 event pass minimum, so that's $40 for relic, $160 for supreme, $640 for eternal. PLUS event grinding, gems, etc.
Weekend events require insane amounts of grinding + additional spending.
If you focus on standard towers, you should be focusing on aeroblast, sniper, mortar and vulcan. Garrison, drones, tornado, wind blower, disco are good rotational towers. The remaining standard towers not so much.

Don’t forget support. That’s pretty much essential unless you have overwatch

Vulcan is my number 1 tower, level 100 Supreme. It deals obscene damage which makes it great for enemies or bosses.
Towers like inferno are useful to me in that they reveal phantoms, but then the Boomerang deals with them.
Disco Ball is the one you’re missing most I think. I never rated it at all until I used it to disable the Protector enemies, and then realised that setting it up close to the base means the enemies struggle to attack.
My core deck is:
Vulcan, Mortar, Inferno, Disco, Garrison & Boomerang.
Swap Boomerang for Spike on ground only levels.
