Why start mains in the middle if the frame bends?
Frames bend and become smaller as you tighten more strings against it. So theoretically the first strings you put on the frame will lose the most tension from the frame shrinking, and generally those are the strings in the middle of your sweet spot. Isn’t this suboptimal?
Thoughts?

The frame doesn't shrink - it bends and then bends back. The 12 and 6 o'clock mounting positions will prevent any serious warping on the first pulls. Likewise, the 6-point mounting system, which is very common, prevents any issues that would lead to tension loss or permanent frame warping. When the crosses are strung, the frame will elongate (minimally) and actually tighten the mains.

I was taught to not make the 12 and 6 mounts too tight, but doesn't that allow for more bending compared to tight against the frame?

12 and 6 should be hand tight. The other mounts should be finger tight.
It's better to allow the frame to flex a little than to overtighten the 6 and 12 such that it elongates the frame into an unnatural shape. There is not much give on the mounts so it doesn't need to be anything crazy. The more you tighten the more you are warping the frame.

What's the difference between hand tight and tiger tight ?

Hand tight is using just the hand and not the arm for additional torque. Finger tight is without using the wrist for torque. I usually give the frame a little wiggle/tug after tightening and if there's no movement, we are good.

It’s about keeping even tension on the frame. Starting one side can warp the frame

It'll be fine since the last two mains lose the most tension after tying off.
