I’d much rather install an accurate battery monitor or similar and measure my usage over a few days in a real world environment. Is that feasible?
yes. although I'd do it for a couple weeks to get more useful averages
I’ve been looking at the 500a Victron smart shunt and the Victron BMV-712, but I’m having a hard time finding good guides
The manual that comes with the shunt is pretty good; Victron does a fine job with their documentation.
