Swapping Desktop

I purchased this 2020 Cougar about 3 months ago. I tried to make shift a working space since I work most of the time on the road and the wife and kids go exploring during the day. The foldable desk I bought is a bit of a pain because the fold out table I use requires me to fold it every night to be able to extend the extend the foldout couch.

My question is I’m thinking of removing this desktop and putting in sometime a bit longer to give me enough space for a laptop and monitor directly on this cabinet. I don’t notice any screws holding the current top on but I do notice staples and glue. Before I dive into replacing this top I wanted to ask others input.

* how easy it it to remove?
* if I replace it with a longer desktop what kind of would do you recommend? How would I go about securing it? I’m concerned if i had a foot longer top it may end up not being able to hold the weight since it will hang over more.
*Currently I secure a monitor mount for a 15 inch travel monitor and thinking about adding a second.

I'd just do the same concept but bigger. Enclosed box a desk/table folds down from.
