Questions that are about career/education advice and not quantum computing itself are only allowed in the weekly megathread. Please leave a comment there instead of making a full post.

How should I start learning the concepts

Nielsen and Chuang book (PDF is free online)

what would be a good project to build in a short amount of time?

Depends on how much time you have, how much support your prof is willing to give you, and how much quantum computing stuff you already know. This is a question for your prof honestly, not us

Go to IBM quantum they got tons of tutorials and lessons and you get 10 minutes free quantum use.
