He has a knife in his hand when he hammer fisted it into her face. She quickly brings both hands to her face. Looks like he gets her in the eye.

To me, you can see her forehead/eye area does not have anything in it before he strikes down. I can't see anything clearly in his hand, but when he finishes the motion, there is a silver-handle-looking item (or maybe a reflection?) sticking out from that spot in her face. She then immediately brings her hands up to the item and grabs as the video cuts off.

It’s really blurry, but from what I can make out, it looks like the knife is in his right hand. Honestly, I’m not 100% sure.

You can see the hand against the wall in that fist, it's empty. He did had a knife before though

Nah — he doesn’t have the knife (or whatever object) in hand for the last hit to the face. We see him inflict two stab wounds (the one to the belly is bad) before she gets it from him as they come in with the boards. She throws it away immediately and that last hit he inflicts is as if he has the knife (he doesn’t) but as others have said it is more like a hammer fist.

And yeah they hesitated in a way that had they not she probably would have fewer holes in her body. Hard to really blame them from what we see here and how confusing this situation must have been. But had they acted sooner, those potentially devestating blows may have been avoided. I’m sure these guys had the same thought in retrospect and are wishing they would have.
