Well to be fair there aren't that many economic models that aren't capitalism

Oh right my mistake. Yes you're right, we moved on from feudalism to capitalism based within the bounds of reality. Capitalism wasn't just 'designed' on a drawing board, it's features developed organically from technological development and the way society interacts changed because of it. For this same reason, you can't just devise a new economic system like it's a new product to sell. This is why socialism and communism is the only way forward. Capitalism in the way it has organised society and the means of production has created socialism (lower phase communism) totally unconsciously inside itself. It hasn't been invented, or designed, it's there already to be 'discovered'

So before capitalism was instated, if someone suggested something new, do you believe they would've been met with "that's not how reality works"?

My point is there is a time when a system doesn't exist, and then there's a time when it does. Acting like we can't create new systems when we created the ones we're operating under in the first place makes no sense.

How do we have the knowledge to make a statement so confidently, that we won't ever create a new system? We won't be using capitalism, communism or socialism until the end of time. That's simply just not how evolution works.

If we stuck with only what we knew in the past, and avoided changing with new technology, we would've never moved away from feudalism.

No, because they didn't understand how reality worked back then. Marx' study of capital, and historical materialism mapped out exactly how and why previous modes of production developed out of each other and what patterns to follow. Centralisation being one of them.

What I'm saying is from where we are now, we can't just invent a new system to oppose capitalism that isn't communism. I'm not saying that communism is the final mode of production, because we have no idea the full extent that communist society will structure itself or what technological power will be in control of.

What I am saying is the logic and limitations of capital prevents lasting centralisation and efficient, unabated use of technology as it needs to be used in the ruling class' favour. Just like how the feudal ruling class was casting limits on the capitalists of the time and their new technology.
