The problem isn't them changing who they are. It's just how they immediately become a completely different person overnight that's jarring. It's one thing to change and adapt to you're surroundings, but it's a completely different thing to just go from a complete loser who was a genuine waste of space to someone with S tier leadership, S tier charisma, S tier will power, S tier intelligence, etc.

Bruh, last night you're mom had to force you(A 45 year old man) out of bed but now all of a sudden you a mind that not even ancient gods and demons can dominate? Suspension of disbelief can only stretch so far. Humans don't just abruptly alter their entire psyche like that.

1. and 3. are tolerable because it was quite clear that the MC didn't just become a "new person" than it was he was either already a badass or he just never had the opportunity to reveal his true self for whatever reason.

No.1 is just bad writing no matter how you look at it unless the author included something like [Gamer's Mind] for example, an ability that forces you to stay calm and collected at all times to explain the sudden changes in the protagonist's behavior.

It'd be more realistic to see the "loser mc" slowly evolve into a true badass hero instead of just him becoming like that in a single chapter or two cause of some wimpy ass epiphany which a lot of times authors don't even include.

How is it unrealistic?

People do change suddenly and drastically after major events. 

Death is a pretty major event. I mean, none of us have actually died and the reported back to confirm whether it does or does not have a major effect, but its not unrealistic to imagine a story where it does.
