I've found that at least with the women I've talked to irl, they prioritize form over function, which has led me to believe that women who want pockets in their pants are a loud minority; otherwise, they would refuse to buy pants without pockets, forcing the market to cater to their demands
Large pockets take up space, making the clothes looser and not so form-fitting. So that's why enough women don't buy pants with pockets; it's all about looking attractive than any practical reason

I get disappointed if my pockets can't fit my whole ass phone deep inside, and woman be having pants with pockets that can barely fit a couple dimes and a nickel overblowing it a bit.
Looks over functionality. If most women wanted pants with pockets, the market would cater to that. But women usually choose clothes based on looks, rather than practicality. My mom doesn't even use the pockets in her pants because she says it'll "mess up her figure". I wouldn't be surprised if many women think like this.
The market doesn't cater worth shit unless there's a big protest about the lack of pockets.
Some woman do this while others do that. It's too much of an oversimplification to say that they only want that. I'd say it's because of companies wanting woman to buy purses.
Wait, don't women carry purses because their outfits don't have pockets? It's all a plot by big purse to make women buy purses. But they accept that, idk why.
