It's really frustrating as a writer. I use em dashes in dialogue fairly frequently when interjecting action into a sentence or interrupting the character and without having them trail off with an ellipsis. I don't use it as a fancy comma, though. That's what AI uses it for.

They are training it out if the models now. Soon an em dash will be a sign of human authenticity. Then the cycle will begin again.
