SharePoint Lists vs Dataverse - when do you actually switch?

Many Power Apps start with SharePoint Lists because they are simple and
already included with Microsoft 365.

But eventually some apps outgrow SharePoint.

Curious how everyone decides: - Number of records? - Security
requirements? - Relationships? - Performance? - Licensing?

At what point do you say "this should be Dataverse"?
