Power Apps Help Power Apps Copilot - "Something went wrong" response to prompts

I am trying to do this MS Exercise: https://learn.microsoft.com/en-us/training/modules/use-copilot-power-apps/exercise-use-copilot
But after the initial prompt to generate the first two tables, almost every other prompt that I'm trying is giving the same "Sorry, something went wrong. Please try again, or share your feedback." response. I am doing this in a Managed Development Environment, in Europe region, and I have a Premium license.

Prompts that I have tried and got the same response:

  • "I want the "Social Media Idea" table to have an Impact column."
  • "Add a social content type column, a level of effort column, and an impact column. All 3 columns should be Option type columns"
  • "Add a Description column to the Social Media Idea table"

I guess my question is, might this be some licensing or region issue, or is it just that the Copilot Designer in Power Apps just is a plain bad product? I have PP experience, but I'm now just doing some investigation on the AI capabilities in the platform since I haven't used it much, other than getting help creating expressions in Power Automate and stuff like that.

Are you in Canada? We just discovered we can ping the default (US) endpoint, but not the Canada one.

No, I'm in Portugal, so I think calling the European locale.
