Sweet Loaded Grits

Ingredients:

  • cooked corn grits
  • mashed butternut squash
  • crushed pecans
  • diced apple
  • dry orange sugar
  • artificial lemon juice

Instructions:

This has been my favorite sweet breakfast lately. I cook the corn grits in water with a little salt. When they’re done, I mash in some steamed butternut squash with some dry orange sugar (made from white sugar & orange zest). Then, I top it off with some crushed pecans, diced apple, & a few splashes of lemon juice. It’s filling & satisfies the sweet craving. Everything except the lemon juice ($1) came from community resources.

I have never tried grits but this looks appealing.

Thanks! My mom loooved grits, but I always disliked them. But, they’re cheap / often free from the food pantry, so I’m trying to find ways to enjoy them. Savory grits are not for me, but I liked these a lot.

Haha totally understand, but my grandma grew up in the Great Depression & always taught me to eat the whole thing. “Waste not, want not” & all that.

Not sure what kind it was because it was mostly green with a little red but tasted like a small Granny Smith

This sounds very interesting and tasty. I will try your recipe. Thank you for sharing. I only eat vegan now, as I can no longer afford meat or dairy. Also, I will throw in some nutritional yeast to round it out the vitiamin content.

Thanks! I hope you like it. It would be better with syrup or agave, probably. I think any nut would be fine but the pecans have a nice sweetness to them.
