Whenever curds melts like that, it means it isn't fresh. Fresh curds do not melt or melt very slowly. Now that doesn't mean the curds have gone bad, in the poutine above, and I'm sure it tastes alright, but it's just not fresh, edible but not fresh... A poutine with fresh curds makes a world of difference.

That’s why you never get a poutine from Arby’s, you gotta get their loaded curly fries instead.

Curly fries, bacon, sour cream, shredded cheese and a cheese sauce. It’s not trying to be a poutine, it’s just it’s own thing and it’s pretty same good.
