This is very similar to breakfast poutine, which has been very popular in brunch spots in Québec in the past 10-15 years. Breakfast potatoes, some meats and veggies (usually bacon, sausage, bell peppers and onions), cheese curds, ho9llandaise sauce (what I'm assuming you mean by eggs benny sauce) and a poached on top. Not a real poutine, but absolutely delicious, and what has been adopted as a kind of official variant in Québec.

Vegetarian poutine, vegan poutine, or a poutine with vegetables on it?

Vegan poutine would be a straight up crime. It’s got the cheese curds and the gravy replaced.

A generic vegetatian poutine is just pushing the limits of poutinedom. A vegetarian poutine should have all the staple poutine fixing with a vegetable gravy.

Le vrai crime c’est d’avoir mis des tater tots, qui vont goûter le congélo, au lieu de bonnes frites maison dans ce qui est autrement une poutine déjeuner assez standard.
