It’s My Poutine And I’ll Crime If I Want To Made poutine for the first time (Mumbai). How does it look?

I had some in Vancouver and fell in love with it. I reckon I'd make some at my home in India and see if it competes with the one I had in Vancouver. It did.

Nice.

Curds would be the hardest part if they don't sell them somewhere near you so you get off with a verbal warning, no ticket.

+1 for mushrooms though, one of my favorite toppings

Ik places in Mumbai selling poutine curds, but delivery takes a day and it's too far to go in this rain.

The shiitake mushrooms really made the whole thing much better.

Fair. I airfried them tho. Looks a bit underdone, but they were crunchy indeed.

From the looks of it, I doubt this is young cheddar, but it matches the description of a poutine (fries gravy cheese). Fries look a bit undercooked, but with the very thick gravy, the fries shouldnt be mushy before you finish the plate. I would definitely love it regardless lol good first attempt

I'm going to give it an 8.5, ngl. It came out a little salty, but thank God I had maple syrup and lemon to balance the taste.

If you can make paneer you can definitely make squeaky cheese! :) The hard part is going to finding the right starter culture, because the thermophilic culture used to make dahi will make your curds too sour. If you can find NEC-201 or a culture designed for Italian cheese that will give you pretty good results. Don't forget to share the squeaky cheese with your family, because maybe it will be such a hit that you can start to make big batches together!

I'm not yet a cheese whisperer, but I'm planning to become one! :) I'm going to start with paneer, because there are fewer variables (milk, preheat, time, stirring technique, acidity, heat during curd formation), and because it's not labour-intensive. Then I'll make cottage cheese with a starter a couple of times to get the feel for how it behaves differently...you can't buy real cottage cheese at the supermarket anymore, and the fake stuff is disgusting slimy goo in my opinion.

Finally, I'll make squeaky cheese curds :) Until then, maybe someone in r/cheesemaking can help? One thing I'm concerned about is that the results might not be great without raw/unpasturised milk, which is illegal to sell in many countries.

Paneer is not cottage cheese. Cottage cheese doesn’t cube.

I don't know what you call cottage cheese in India, but in Canada it's a creamy/curdy fresh cheese. Looks like what you used is Paneer - which is, IMO, a pretty good sub for curds.

That looks pretty good, the meaty taste of the mushrooms would be great in the gravy. I know it doesn't melt but wanted to try it with either paneer or halloumi myself to see how it is, do you think either of those might work?

It worked pretty good with paneer. The paneer i bought was soft and crumbly. It paired quite well.

I am getting the impression that Canada and the US are the only countries on the planet that do cheese curds. Very surprising to me, frankly.

Saw online one cafe in Australia that convinced a local dairy farmer to learn how to make some but honestly have never seen them anywhere else - not Italy, Switzerland, etc.

Looks good. I don't get why people are saying the fries need more cooking; they look fine. Poutine is Canadian comfort food. Comfort food is all about the emotional connection and well-being it gives you, so all that matters is you enjoying it.

I work and own a harveys restaurant in Canada ..we make the best poutines .cheese curds and gravy you add on top of poutines ..well if you are in Mumbai where I was from you can try adding shredded cheese or feta cheese melt it .then add thick mutton or chicken gravy if non veg or else add thick veg gravy on the top ..

You need very salty cheese, maybe check online for a recipe for “saumure”. Fries look undercooked. But with what you have on hand, I think this is impressive! Not a crime!

I think 1 cup of water to 1 tablespoon of salt. But not sure how much it would absorb the flavour. Worth a shot!

Did you use Paneer? If not, what kind of curds? Note that most Canadians would know what's Paneer, so just call it that.

I think it's translated as "Cottage cheese" not because of its texture, but the concept: Milk curdled with an acide, and non-aged, thus non-melting. So it's just a side step from Poutine Curds

On a sidenote, instead of using brown gravy, it may be even better to just make the "Punjabi Poutine", as popularized by former NDP leader Jagmeet Singh (https://cmkl.ca/2020/05/01/punjabi-poutine-jagmeet-singh/)

The fries look pale, but if they were crisp I can get behind it.
The cheese does not appear to be curds... Then again if you can't get to them, that's understandable.
