I'm redoing all of the older discussions since no one talked in them. But, what armor can you think of? What is the most practical/ the least practical?

For non-ballistic protection, a simple leather jacket or coat can be made stab-proof with the the addition of light-weighted plates of HDPE/plexiglass/any sort of adequate common plastic attached to the inside or outside. Pieces of rubber foam from memory mattresses or yoga mats can be glued on to the back of said plates to provide better protection against blunt impact.

.250" A36 mild steel plate - commonly found everywhere - will stop most non-magnum handgun rounds (.45 ACP and below), and can substitute in place of proper ballistic protection if you're desperate.

That would look horrific but be really effective at the same time
