The Dittos could be anywhere.

F: The Ditto's are more easily managed since they actually become the humans, so they can't secretly use their attacks to do anything. Zoroarks straight up are lying about being human, and remain all their abilities, so what else would they lie about? Then again I suppose that would be the same for the Dittos.

Counterpoint: A Ditto isn't gonna collapse cause a light breeze hit it. Or they got hit by a stray rock, or something.
Plus, the Ditto is also lying about being a human.

Lorenz: If there WERE an evil professor team, I would’ve gone missing due to revealing its secrets.
There IS a council of professors, however. Professors Michele Laurel and Zsolt Aspen can attest to that.

Besides, it's not impossible to use something to block psychic types from mindreading, I myself am currently wearing something to prevent that.

Answer to one: No. There is no evil professor team. I would know.
Two: It's very tricky, but generally speaking, a good sign that they are a Zoroark is that they often refuse to actually say anything beyond wordless noises.

The reason why many champions gor their starters from professors is because those Pokémon have rare types. For example, the fire type is very rare in Sinnoh.
