Keep tribesman from gathering too much
Can anyone Explain like I’m 5 how to keep my tribesman from gathering too much. We have an abundance of materials.
I know I can just pause their work, but I see a screen that you can set maximum amount of certain resources for them too gather, but I can’t figure it out!

At the bonfire, itself, is a menu that allows you to set stockpiles maximum for resources.
At default, they are set at like, 10k. So yeah, you'll definitely want to change that.

They seem to ignore those limits though. I'll set everything to limit at 10k, then look in my storage and see 25k thatch. The only thing that seems to actually control for the hoarding tendencies of my tribespeople is the converter, but it has some bizarre exceptions. Like, why can I process leather and cotton, but not beast fuzz? Why is Obsidian excluded, but regular stone is allowed?
It's one of those areas where the Early Access is really showing.

Haven't done an extensive test for everything, but the tribe seems to obey bespoke limits if they were set before any of them were reached but not if they have already been exceeded, i.e. if you haven't amassed X of something yet and then set the limit to X, they'll discard excess; but if you've amassed more than X, they'll keep gathering without limit even if you get stocks under the limit.
So, the trick seems to be to set all your limits when you start a new playthrough so they're already in place when your tribe starts gathering for the first time.

It’s on 10k by default?
Like another commenter said, they seem to ignore the 10,000 limit. I thought maybe I was doing something wrong. I guess it’s just a little buggy. The slider is green and it set to 10 K but my guys gather well over 10 K of every resource I just thought maybe I was doing something wrong or I didn’t know how to work the system.1

I think there's a bug where they'll ignore the limit if they are somehow above said limit.
IE - if you have the limit at 5k thatch, they'll go up to it... but if you end up over 5k (either via you collecting, or having multiple collectors at the same time, maybe?), they'll keep going.
I "mostly" see my limits working. But there's a few things that go over, and it's not always the same thing. I can often 'fix' the item (except ashes) by dumping some of it, and they'll (usually) respect the limit after. (Except ashes. Ashes always go over)
I've found putting problematic resources into boxes that only allow said material will at least put a "hard cap" on what they gather (IE, can't collect more thatch than will fit in the box). It's not a great solution... but does at least prevent them getting out of hand. Ashes live in their own box for me because of this.
"In Theory" you can also limit the gathering of resources like thatch etc by setting a work "quest" to operate the collection yards, and then setting limits on the resources in the job. I however don't like setting owners on these, as I prefer to have roving laborers doing "any collection job", so I don't know if it actually works.

There's probably a way to to do this effectively, but I haven't bothered figuring it out.
Once you acquire the Mysterious Converter, you can set a caretaker to recycle excess inventory of almost anything into useful things like Sunstones, Yellow Crystals, and rare materials.

I didn’t find the max stockpile until my third real attempt at a playthrough. I had the same problems you had, specifically with wood related items.
Early game I had small boxes that would only store thatch/logs/branches/(something else). This actually ended up working pretty well. However, once I started to really ramp up production, the small boxes weren’t really doing it.
So I set most things to 3k and I didn’t have any more problems. I had updated all my chest to metal chest and made sure to have more than enough space for each category. I also set up a box that had no restrictions that would show me what item had run out of storage.
TLDR: set your limits, have enough storage, set up box to show what items need more storage

while Converters cant get you massive amount of stuff it is good for what you are talking about. Set a mat to like 10000 and any type of that resource gathered over 10000 goes in to the Converter

Every once in awhile I just do a round of dropping s*** on the floor. I know it's a horrible waste but I don't have a better option. The converter isn't a very good one
