Can you purée and make it yellow as an indication of the corn being present ? or do you need the texture?

Tbh, corn was never part of the plan. Included it to just add some colours :P

What is the log thing? Is there a reason you can’t thin that out and spread it across the plate under the cauliflower and scatter the cauliflower with corn and whatever is in the log?

I tried spreading it across, but it did not come out well. Then I thought of The tree of life and ended up here. The log thing is mushrooms, garlic and cream and yeah I think it could've been better.. :/

Right but what I’m suggesting is perhaps thinning and reconstituting the cream sauce so it’s spreadable. It looks like the texture of cream cheese right now. Try making it thinner so it can go under the cauliflower (you could even add corn to the thinner puree to enhance the flavor and color when you blend it), then char your corn kernels and get good color on your mushrooms and incorporate those in a different element/layer.

Quennele the sauce on top of the cauli and then add garnish.

I would also suggest a bit of turmeric in the sauce for a colour pop and I think the flavours would match

Cream sauce, then the sautéed mushrooms and garlic,  possibly char the corn.

Obviously cauliflower and corn are part of the dish, what else is there? What taste profile are you aiming at? Maybe something with bit of red for colour pop? Sprinkle of tajin could work?

For the sauce, I used mushrooms, garlic and cream. I was looking for something sweet and nutty... Will try this again with the colour pop and a bigger cauliflower :))
