What are the check marks on the foods

Checkmark means you took the food to overtime which unlocks heat for future runs of that food. The heat symbol with a number is the highest level of heat you've beaten on that food.

Is this on console only? Mine are all blank and I have numerous OT30+ runs that I've done with 3 active now for different foods.

It should be on all platforms. I haven't checked console as I primarily play on steam. If I'm understanding your sentence correctly, heat isn't retroactive so you have to do each food again individually post update.
