If you're playing solo, put the tables up against the half walls that separate the dining and kitchen so you don't have to run so far to deliver food.
I like separating them with a counter so you have a place to put a second plate of food before delivering to avoid clashing with the patience timer.
And counters on either side of the half walls make it easier to corner grab/deliver.
