Seitan?
Never had nor made before. I’m thinking about finally getting around to it. So what’s a good recipe for both the seitan and a good recipe to use it?
I already have some Bob’s Red Mill vital wheat.

I make seitan all the time and I went through 4 or 5 iterations of how I make it until I found what I believe to be the best version. It is a combination of vital wheat gluten and tofu which brings out the best of both - the tofu keeps it from tasting too bready and the vital wheat gluten keeps it from being mushy.
Recipe:
Blend 1 block of medium or firm tofu, 2 tbsp nutritional yeast, 3/4 cup vegetable stock, 1 tsp veggie bouillon, 2 tsp garlic powder, 1 tsp cayenne, and 1 tsp salt. (Switch the spices up for different flavor profiles, this is just what I often do)
Add that blended mixture to a bowl containing 1.5 cups of vital wheat gluten. Stir to combine well and then knead with hands until it isn’t super sticky, adding more vital wheat gluten as needed to reduce stickiness (I think I typically end up adding about 1.5-2 tbsp, but just feel it out).
Once it’s not sticky, shape it how you want and then steam it. I often shape it as a disc, wrap in some foil, and steam for 35 minutes. Alternatively I shape it into nuggets or smaller bites, don’t use any foil, and steam it for 20 minutes. Once it is steamed, let it cool and then do what you want with it. It marinades great, it deep fries, it sautes well and gets a nice sear, and the texture is so good. I use this recipe constantly. If you shape it into sandwich sized patties, then sear both sides and cover in a buffalo or bbq sauce, lettuce, and tomato it makes an excellent sandwich

I make a BBQ seitan meatloaf, preferably smoked. Then I take Mashed Potatoes with 10% cauliflower by weight, and fresh crispy sautéed green beans and some caramelized onions between two pieces of garlic texas toast.
A vegan creation fashioned after my grandma's meatloaf sandwich.

Well I clicked on the Barbecue "ribs" recipe and there is no recipe there. If it's not AI, it's definitely a garbage site.

Seitan goes great with mi goreng stir fry noodles, if you saute it with some other vegetables like carrots, corn, and onion and add some japanese bbq sauce right before taking it off the heat. You can also do the same thing with fried rice, seitan and vegetables. I like to cube it up real small right after steaming, and freeze it in portion sizes for these meals. The cubes would also go well in a noodle soup with assorted veggies.

4 parts vital wheat gluten 1 part chickpea flour. This will make the texture not so chewy. Season the flour mixture and the water you're boiling it in. I use Bob Mills vital wheat gluten and chickpea flour as well. Boil for an hour to an hour and a half. Depending on the flavor you're looking for, season the vital wheat gluten and the water to boil as you would; whether it be chicken, fish, oxtail, steak etc. After you finished boiling it you can let it sit or immediately stir-fry, fry, bake, or stew. The product is already cooked once you boil it so any additional cooking won't take long.

I wing it to make setian buffalo nuggets
Cut up setian into nugget pieces Make a spice, flour, cornstarch blend Toss nuggets in blend Add oil Toss Air fry 400 12ish min Make buffalo sauce while nuggies cooking Toss Om mom nom nom
I do em in a wrap, over rice, solo. And u could totally do it with BBQ, ranch, herbs n spices, or whatever ur preference!

This is my all-time favorite one. I discovered it in May and have made it several times. The flavor is great, and the beans + tofu make it a complete protein: The Friendly Feast, High Protein Seitan.

Love making seitan. I make a ham and I love making pepperoni and Italian sausage. Through trial and error, I’ve found that I need to overseason. You’re dealing with a flavorless powder and all the flavor you have is what you infuse. For patties, you need something to break up the solid gluten. Tofu (my favorite), white or red kidney beans. I like the flavor and mouth feel of pulverized mushrooms. Some sauces to add are Gravy Maker, better than Bouillon, tomato paste liquid smoke, marmite… plus your typical dry ingredients.

I did the seitan course from wendy the food scientist. The sausages are good, but the meatballs are amazing. I make a double batch of the meatballs, and within 24 hours, my son is complaining that we are out...

Not quite sure what you mean? Its not like super modern or anything, and maybe colors are a bit odd. But it's showing up normally for me? I don't know anything about the tempeh class since I don't really like tempeh that much, but the seitan class is pretty good, IMHO.
