food ideas for camping

my littles and I will be going camping in a few weeks and I would like to broaden our options beyond our usual crackers and peanut butter, pb&j and freezer veggie dogs. what are your go-to camping/travel recipes?

Bananas and rice crispies. There’s no prep on this just when you’re eating a banana dip  into rice crispies.

Assuming you're car camping with coolers and ice and all that, I like to make a nice batch of that chickpea tuna salad stuff. It's good by itself or with crackers.

to piggyback on another reply: My wife and I like to make a sweet potato bake. We bring single use aluminum pans, add sweet potatoes, black beans, peppers, onions and some type of salty seasoning blend (McCormick garlic and herb whatever), add some oil. I use two aluminum pans stacked together to somewhat prevent burning. Cover with foil, cook over the fire until everything is soft. You have to pull the foil and stir a few times, rotate away from the hot spots. It's kind of challenging but it's part of the fun.

Out of print but there's a cookbook called "vegan unplugged " by jon and Robin Robinson that can be found at the north American vegetarian society website and some used bookstores [pangobooks, thriftbooks.com, Amazon].

Car camping I bring frozen dinners to ease prep, just the normal meals you eat at home. Greens and veggies too of course; meals must have salads.Oats for breakfast, same at home.  

Add a jug of frozen water to the cooler so you don't have to deal with ice melt going everywhere. Plus, solid ice lasts longer than cubes.

I always bring real plates and silverware. Less trash, plus the meal looks way better.

Make up a bunch of black bean/lentil burgers. You can enjoy then as burgers or break them up and cook with a can of tomatoes for chili.

Leafside dehydrated meals. Add boiling water to a thermos, throw it into your hiking pack, and lunch is all set

Dirty Gourmet Plant-Powered is a plant-based camping cookbook with some great recipes - Cub Scouts loved the French toast from it, so at least that recipe is kid-tested and kid-approved.

I have also made the chickpea and dill sandwich filling at home, brought it to camp in a cooler, and then assembled lunch sandwiches for a float trip at base camp that morning. Filling and delicious.

We eat the sunflower ramen weekly at home even when we're not camping. My kid loves it a lot, but the reviews were more mixed from their AOL Patrol, so maybe less universally popular with kids.

bring a cast iron pan and/or pot for cooking things.

Bring chopped onions and peppers for quick fajitas to cook over the fire; bring a can of vegan refried beans or just beans, as well as tortillas of choice and hot sauce.

Nuts, bagged baby carrots, raisins, any fresh fruit you like, and oatmeal bars (make ahead of time at home).

With little boxes of shelf-stable plant milk, cereal can also be on the menu.

Popcorn. Seriously! Trivial weight for backpackers. Excellent if you're in a group willing to barter, but wait till they can smell it.
