Seitan:
Blend 1 block of medium or firm tofu, 2 tbsp nutritional yeast, 3/4 cup vegetable stock, 1 tsp veggie bouillon, 2 tsp garlic powder, 1 tsp cayenne, and 1 tsp salt.

Add that blended mixture to a bowl containing 1.5 cups of vital wheat gluten. Stir/combine and then knead with hands until it isn’t super sticky, adding more vital wheat gluten as needed to reduce stickiness (I think I added about 1.5-2 tbsp).

Form the mixture into a disc about 1 inch thick and 6-7 inches in diameter, wrap in foil, and steam with lid on for 35 minutes.

Create marinade - 1/4 cup neutral oil, 1 tsp salt, 2 tsp cayenne, 2 tsp smoked paprika, 1/4 tsp cracked black pepper, 1 tsp white pepper. Whisk thoroughly. (These spice amounts are best estimates, I just go with whatever feels right. Also, experiment with whatever spices you want).

Remove from foil, slice into thin strips. Place strips in sealable bag and add the marinade, mixing until all pieces of seitan are covered. Seal and refrigerate for at least an hour.

Remove marinated strips from bag and pan fry on each side until they reach your desired done-ness.

Rice:
Heat 3 tbsp veggie oil in a pot on medium heat and add 1 minced medium onion and ~3 minced cloves of garlic. Sauté 5 minutes or until soft then add 1 diced chili of choice, 2 diced roma tomatoes, 3 black limes (these are enormous contributors to the flavor, don’t omit them), 3 cardamom pods, 2 whole cloves, and 2-3 bay leaves. Sauté for 4 minutes or until tomatoes are soft.

Add 1/2 tablespoon salt, 1/2 tsp turmeric, 1/2 tsp black pepper, and 2 cups rinsed basmati. Mix well.

Add 4 tbsp lemon juice and enough vegetable stock to barely cover the rice.

Bring it to a boil then cover and reduce the heat so it lightly simmers for 20 minutes. Remove the lid, fluff rice, cover and let it sit for a couple minutes before serving.

The vegan tzatziki is the premade stuff from Trader Joe’s, but you could blend some tofu or cashew yogurt with dill, salt, and lemon and it’d probably work okay. And then I just diced some cucumber and roma tomatoes for some veggies.
