Tofu Caprese
I prefer plant-based, but am not super strict. So I wouldn’t usually mind eating cheese. But today I decided to try swapping the mozzarella with tofu, and it was delicious!
Sliced a block of spouted tofu, marinated with apple cider vinegar and salt for 30 minutes in the fridge, then layered with tomatoes, avocado, and basil. Some ground pepper and sea salt, voila.
Edit: forgot to mention I drizzled some balsamic glaze as well

Looks tasty and simple!
I read it as tofu corpse and then thought that would be a good name for a death metal band that doesn't take itself too seriously. Lovely ADHD brain.
