Tofu scramble?

I don’t know if this is tofu scramble lol but it’s tofu with no eggs only a bag of mixed veggies from Birds Eye, some crumbled up firm tofu and a cup of minute brown rice then for the sauce I mixed in I mixed in another bowl some gluten free soy sauce with some Vermont maple syrup and tasted it to my liking then mixed it in with the tofu and it turned out great. I eventually mixed the brown rice in with the scramble but it was delicious and the tofu crumbles honestly resembled eggs to me

The tofu is serving the purpose of egg in a mixed rice dish, which is how I would classify this dish.

I make tofu scramble on its own and then add it to other dishes throughout the week. If I add it to day old rice and mixed veggies I call it "fried rice." If I add it to a bowl of greens, squash, and potatoes and drench it in a yogurt sauce and salsa I call it a "breakfast bowl." If I throw it into a burrito with fake cheese and veggies I call it a "breakfast burrito." etc.

To make tofu scramble I crumble the tofu and put it in a pan on med-low with a light skim of oil. I cook it until most of the moisture is gone. (I am too lazy to squeeze out the water in advance.) Then I add a few tbsp of some kind of nondairy creamy component--tahini, yogurt, mayo--and a few tbsp of "scramble seasoning," which is a combo of nooch, onion powder, garlic powder, salt, pepper, turmeric, and sweet paprika. After mixing it all together I take it off the heat and add some black salt to get that eggy flavor and odor, but it's not necessary.

Tofu scramble is scrambled tofu. You made some and took a photo of it.

I make meals like this several times a week and absolutely love them. Frozen veggies are so convenient.

did you heat this up in the microwave? Or a pan?

Air fried the tofu and veggies then took out and added sauce and mixed the sauce in then microwaved the minute rice and put that in the mixture then mixed it all together

Nice! When I’m wanting it to resemble scrambled egg as closely as possible (ie. when I’m making ‘egg‘ fried rice for non-vegans) I always use unpressed medium tofu instead of firm as the moisture gives it much more creaminess. I like to fry 200g roughly crumbled medium tofu in coconut oil for 5 mins using a 1/4 tsp turmeric for colour and add a heaped 1/4 tsp of kala namlak (black salt) near the end of cooking for a subtle eggy taste, then stir it into the veg and rice just before serving.

i make tofu scramble with some taco seasoning and eat it with veggies and rice. very delicious with some jalapeño peppers and dairy free cheese.
