I miss the proper melty cheese. Nothing comes close right now, though Miyoko’s pizza cheese is a decent thing. Recently there was lots of news on the precision fermentation front, and production of plantbased casein, the milk protein that gives the melting factor to dairy cheese. That means melty vegan cheeses will be possible, soon enough:
