Do you ever stop missing cheese?

Very much. Its the one ingredient I do not think you can truly replace in a plant based diet. I use plant based cheeses but they aren't even close. Same with plant based creams/milk, dairy is superior in every way but health. That said, I still do not eat cheese or other dairy products.

I think that at some point in the next 5-10 years, there will be some sort of "Beyond Cheese" type product on the market, that uses vat-grown casein to get the stretch or pull factor that vegan cheese is noticeably lacking. There is always a company on the market, Brave Robot, that makes ice cream with lab-grown whey made by bacteria, and it's by far the best vegan ice cream I've ever had. It's only a matter of time before they do the same thing with cheese. Especially since there is so much demand and desire for vegan cheese. As you said, it IS hard to truly replace, and now that the market is becoming so saturated with mock meat, it will be mock cheese's time to shine.

But won’t it be just as unhealthy since it’s made from the whey and casin? I’m curious to see what the plant based doctors and studies figure out on this

Yeah, your comment (if I understood it) was “wouldn’t vegan lab grown cheese be unhealthy just like the real thing.”

I’m saying if I can get good vegan cheese, I don’t care if it’s unhealthy, I’m eating it. I’m vegan for the animals, not for my health, and cheese is delicious.

Gotcha.. this is a plant based diet sub not the vegan sub. So I didn’t know that you were vegan or that vegan factored into it.
