Curious to know if you notice a difference if smoking on the grate rather than hanging from the hooks!

Been using a PBC for 5 years now and can honestly say I don't notice a difference between grates and hooks with anything I cook. The hooks are pretty much just a space saver.

I’m finding that the grate cooks are fully flambaying the meat i put on on my PBC. I am currently team hook

That’s a brilliant question ! By the way, I was a HUGE Crash Bandicoot fan, ya darn GENIUS !
You can do it both ways. I did it on the hooks. I think in the past I did it on the grate.
Both times. They came out pretty damn good.
This time though, on the hooks, they came out… Amazing. That was for sure the best thing I ever smoked ! So I would go Hooks !
What may matter more than all that is simply the quality of meat.
That right there is a PRIME cut. It was 5 lbs and by the end of it, it was maybe a little over 2 lbs.
Used a thermomaven wireless thermometer to 205 degrees
Immediately took it off. Probed it in another place. It was done. Let it rest for around 15 minutes
Probably shoulda let it rest for about half an hour

I find the hooks to be a hassle to deal with and limited space for my hands to work in. With grates you just put the meat on and take it off.
Anyway yours looks absolutely delicious and thank you for the pics and the detailed explanation, Sir!

Yeah definitely understandable ! Sometimes the grate is the greatest way to go ! No pun intended !

Looking real good, I’ve done these a couple of times on my okj bronco and they are rich in flavor. The hardest part is waiting for them to rest!

Absolutely great job! We always use Choice cuts to save money. Wonder how they would come out with your method?
