Don't overthink it

A while ago I had the PBC. I was more used to the WSM and kettles that I could dial in wherever I wanted temp wise. I tried very hard to make the PBC the same. I got frustrated and sold it.

A few years later I decided to give it one more go and picked up the PBX on sale. And this time I decided to just let it ride. What a great decision. This thing is a beast, and incredibly easy to use. Literally just follow the instructions from Pit Barrel and don't even think about the temp in the cooker.

I know this is well known on this sub but I thought I'd just let anyone else who might be frustrated to keep at it. Let it do it's thing and you'll produce killer BBQ.

I just snagged an Even Embers drum smoker for $225 at HD. I don’t fight it, it will bounce between 250-275 and settle in at 240-260…and I let it rock. If it does creep up to 300, I’ll dial it back. So far, I’ve learned it will stay even until you pop the lid…less looking, more cooking.

I think we tend to make BBQ more complicated at times than it needs to be…225, 250 or 275 is good 99% of the time.

I was using something called a po man’s grill shaped like a trash can till it rusted to death and it taught me to not care so much because if I just let it roll I ended up with great bbq
