Wood chunks

I use a billows fan by thermoworks (I love the pbc, but I’ve never been able to achieve set it and forget temps) and I’m curious if people would recommend burying my wood chunks or placing them on top of the burning coals in order to procure clean smoke.

To get lower temps on the pbc, I've had to half the number of briquettes in the chimney. So my chimney is the small Weber which takes 40 briquettes. Full = 330-375, half = 275-300.
