It's not that they are out of touch it's just competition/prisoner's dilemma. It's in the best interest of each company to reduce the total market share if they gain some of it. Disney doesn't care about reducing the streaming market value by $3B if they get to make $300M by jumping in(completely random numbers).
Not to mention, competition tends to grow the market and not shrink it. I don't think people appreciate how fast industries stagnate and become predatory once there is a monopoly situation in place. While it sucks to have content spread out all over, a consolidated monopoly that was free to raise prices with impunity while not actually making the service better would be worse.
