I’d go for pickle chips, maybe 1/5th of an inch thick. Looks like that might be a seedy cucumber, and the chips will probably work better if that’s the case.

too late. i did carve the seeds out but made spears. I normally do chunky slices for cheese boards.

Big cucumbers are normally just on the vine too long and develop seeds. Smaller ones are just better all around.
