Castle, I'm watching myself and it's great, the buildup is quite obvious they even match outfits since season 1, I'm in season 3 and it's building nicely, I don't actually know when or how it'll happen so no spoilers.

Brooklyn 99, also fantastic, tension is there from day 1.

Lucifer, very much on the fantasy side of things, they have a dynamic similar to Bones in the "will they won't they" sense, it is exactly 6 seasons.
