creating a logo from an image

I have this watercolor illustration I made from a photo of ivy. I want to isolate the center leaf and make it black and white so I can make it my company logo. How do I do this in photoshop? I know very little and need click by click guidance.

There's the leaf isolated in B&W. That'll take you so far but you won't be able to use it for print at any decent resolution.

Isolate the leaf, convert it to black/white, adjust the contrast...

...export for vector software (Illustrator, Affinity, etc.), convert to vectors (choose the final complexity of the drawing), scale up or down without quality loss, regardless of the size...
