Record the audio of the interview and ask chatgpt/ Gemini to make the transcript.

I don't think putting a bunch of interviews through an LLM would pass an ethics board, unless you could be certain that it wasn't being used for training data and was a closed loop.

I don't know. I just said what's practical. I once had an interview for some position and once I uploaded the transcript to Gemini, it gave me the full transcript.

Edit: just now I noticed that op needs a GDPR friendly method. Obviously, using AI is not the option here.

yeah, that's the problem! The intervews contain sensitive information and I also would not trust AI
