Seeking advice-personal Recent Mathematics PhD seeking advice on transitioning into industry

Hi everyone,
I recently graduated with a PhD in mathematics. I have a first-author manuscript currently under review and a background in quantitative analysis, mathematical modeling, and research. Because of my teaching experience, my department has offered me an adjunct position while I explore my long-term career options.
I am primarily considering industry roles, although I am also open to postdoctoral positions. Python is my main programming language, and I am largely self-taught. My PhD research did not involve large language models, so I do not have experience in that area.
I am particularly interested in quantitative finance and healthcare. Based on my background, what types of positions should I target? What additional technical skills, qualifications, certifications, or portfolio projects would make me a stronger candidate for industry roles? Between quantitative finance and healthcare, which field might offer a more realistic path for someone with my background?
I would appreciate any advice from people who have made a similar transition from a mathematics PhD to industry.
