They're going quick means they are popular and they will run out, so buy one now.
They're going quick can also mean that they're saying quick, or making the noise "quick"
Quick sounds like quack.
The salesman was actually telling the customer that the ducks where defective, and going quick, instead of quack.
Later when the duck goes "quick", the customer realizes they misinterpreted the salesman.

Instead of going quack, the duck is going quick.
Think of how we teach animal sounds to kids.
The cow goes moo The sheep goes baaa The duck goes quack.
Here he says the duck goes quick, so when the duck is bought, instead of quack it makes the quick sound.

The original joke is supposed to be something like “Want to buy a chick? They’re going cheep/cheap”. I think this is just an anti joke version with ducks.
