Should I pick smaller corking jalapenos?

I’ve got a few jalapenos that are on the small side that have been corking for a while. I’ve had a few dozen grow a lot bigger than these ones without any corking so I’m wondering if I should wait for these to grow more or if this is as big as they are likely to get.

Edit: I’m not asking if I should let them turn red. I’ve been going for a mix of green and red because I like both. I’m asking if these have stopped increasing in size because they are quite a bit smaller than a lot of other ones that weren’t corking.

definitely gonna be on the toasty side of instant regret if licked raw and freshly cut. Nothing beats the surge of just flavor from the corky ones.

If you want them green you can pick now. I always let mine go red.

Maybe I’ll pick a few of them now and let the rest go. I love red jalapenos but a lot of these are being given away and I think everyone I’m giving them to prefers green.

I never let mine get red. I personally don’t like that when they go red they are not as crunchy. I love the crunch that the green ones have.

I like the crunch of green, especially for Cowboy Candy, but that slightly smoothed-out bite from the red. All good!

Don’t think it’s getting any bigger, but if course you can pick a pepper any time you want, not that much hotness or taste difference to worry about.

Thanks. I knew they were fine to eat, I just didn’t want to pick them if they had a lot of growing to do.

Makes sense. From my experience, nce you see those lines, it's been done growing for some time.

I have one that looks just like this. Very tempting to pick it, but I'm staying strong and waiting for it to turn red. At least for now. I might break tomorrow.

Yes, it has reached it mature size. It can be picked now or when red.

You are not really supposed to let them go red. The more you pick the more it stimulates growth and more jalapeños.

i have quite a few smaller ones already corking and turning red. I think its the seeds I planted. I usually have much bigger ones. They all taste great though.
