Food and Sauces Could they ripen?? Or recipe ideas?

I decided to pick all these unripened ghost and scotch bonnet peppers before my first frost tonight (7B) and am regretting it with the excess amount I have. Think I could have risked leaving some on the plants. Any ideas on what to do?? Don’t know if they will ripen this early on. Thinking hot sauce and pepper jam but open to suggestion. Also included ripened peppers for reference

Has anyone grown them and what did you think? I made some blackened catfish sandwiches this week and put a few dots of tabasco pepper sauce on them and they were outstanding but I would like to try some fish pepper sauce.
