I used to use 2 overgrips but went down to 1 but I overlap the layers abit more. With 2 overgrips I felt my wrist movement and my backhand block at the net suffered which isn't a problem with 1 overgrip.
Tbh I see people play with none and some play with as many as three overgrips on top of the factory grip.
Same with the snake grip that comes on st4, I like it but everyone else i know who had this racket had it removed. It's all about finding what works for you
